Hot Water Cake With Penuche Frosting Recipe
My Mom used to make this for my Dad to take on his fishing trips. It's moist so keeps very well and isn't too sweet but has a beautiful brown sugar frosting. My job was to chop the raisins to smithereens while she made the batter. Whew

Ingredients
  • CAKE:
  • 2 c. finely chopped raisins
  • 2 c. boiling water
  • 1 c. butter
  • 2 c. sugar
  • 2 eggs
  • 1 t. nutmeg
  • 2 t. cinnamon
  • 3 c. plus 1 T. flour
  • 1/2 t. salt
  • 2 t. baking soda
  • PENUCHE FROSTING:
  • 2 c. brown sugar
  • 1/2 c. butter
  • 1/2 c. cream
  • 1 t. vanilla

Directions
  1. CAKE:
  2. Pour boiling water over raisins & let it soak til cool; do this way ahead of time so they'll be cool by the time they're needed for the batter;
  3. Cream butter and sugar;
  4. Add eggs, one at a time;
  5. Beat in nutmeg and cinnamon;
  6. In separate bowl put flour, salt and baking soda;
  7. Add flour mixture to butter mixture alternately with raisin mixture.
  8. Pour into greased and floured oblong cake pan.
  9. Bake at 350 for 35 minutes. Top will e browned nicely and edges pulled away.
  10. FROSTING:
  11. Stir butter, brown suar and cream over low heat til dissolved;
  12. Boil to soft ball stage;
  13. Beat until cooled, then add 1 t. vanilla.
  14. Spread over cake after cake has cooled.
