How to make it

  • Melt the plain chocolate.
  • With the help of a pastry brush coat the insides of muffin-size paper cases.
  • Put in the freezer for a few minutes.
  • Remove from the freezer and repeat the coating procedure.
  • Put back in the freezer.
  • Soak the gelatine in cold water.
  • Whisk the egg yolks with the sugar.
  • Melt the white chocolate and gelatine together.
  • Add to the yolks
  • Add the egg whites previously whisked to soft-peak.
  • Carefully peel off the paper cases.
  • Fill the chocolate cases with the mousse.
  • Sprinkle with the grated chocolate and chill.
