How to make it

  • Crisp bacon, (I like to spread the strips out on a cookie sheet or jelly roll pan and bake at 325 untill crisp... not so messy.)
  • Saute onion in butter until transparent.
  • Add potatoes, salt, broth and cook until potatoes are tender.
  • Lightly mash potatoes, so there are still big chunks
  • Add milk and heat to scalding, adding celery seed and pepper to suit taste.
  • Mix in bacon.
  • Serve with chive sprinkled on top.
