Ingredients
  • 1 can pink or red salmon
  • 4 frozen individual puff or pastry pie shells
  • 1 egg
  • 1/2 cup single cream
  • 1 handful fresh spinach leaves
  • Pinch of cayenne
  • Salt and pepper to taste

Directions
  1. Preheat oven to 400F.
  2. Divide salmon into 4 portions and place each portion in individual pie shell.
  3. In a mixing bowl, mix egg, spinach, cayenne, salt, pepper and cream with a hand blender until well blended.
  4. Pour into each pastry shell, covering salmon.
  5. Bake for 15 minutes or until golden.

You know I have had a fish allergy for the past 12 years, and last month when I went to the doctors to re-do my allergy test to see if I was still allergic to fish he said it was gone!!! So I am now looking for all fish recipes and this one I will try for sure. Thank You
