Potato Candies or Bonbons

- 1 potato (peeled, boiled, mashed, cold) shopping list
- 1 tbsp powdered sugar (confectioner's sugar) shopping list
- 2 tbsps peanut butter shopping list
How to make it
- Cook potato as usual (or use a mashed leftover potato).
- Cool and mash it well. Add the powdered sugar to the mashed, cold potato and mix well until all the sugar is absorbed.
- Roll out the potato mixture with a rolling pin on top of a long, rectangular piece of wax paper (like it was pastry crust) until it is very thin, in a rectangle. Spread the peanut butter evenly on top. Roll the dough into a jelly or pinwheel roll. Wrap the wax paper around the roll and refrigerate for 1 hour. Take out of the fridge, unwrap and slice into 1/4 inch slices. Fan out the candies (bonbons) on a plate.

I tested this dish out (http://amodestobservation.blogspot.com/2010/02/cooking-potato-bonbons.html) and it turned out okay...I think I may play around with it and make a few modifications, but it is a very interesting dish. Thanks for sharing!
