How to make it

  • Cook potato as usual (or use a mashed leftover potato).
  • Cool and mash it well. Add the powdered sugar to the mashed, cold potato and mix well until all the sugar is absorbed.
  • Roll out the potato mixture with a rolling pin on top of a long, rectangular piece of wax paper (like it was pastry crust) until it is very thin, in a rectangle. Spread the peanut butter evenly on top. Roll the dough into a jelly or pinwheel roll. Wrap the wax paper around the roll and refrigerate for 1 hour. Take out of the fridge, unwrap and slice into 1/4 inch slices. Fan out the candies (bonbons) on a plate.
