How to make it

  • Combine stock, oyster sauce and chilli in a big saucepan and bring to the boil, covered.
  • Prepare noodles as per packet instructions.
  • Add shrooms, cover and cook for 1 minute, add bok choy, cook for 1-2 minutes, till its bright green.
  • Stir in tofu.
  • Divide noodles amoung serving bowls and ladle soup over. Sprinkle spring onions on top.
  • Now eat it with chopsticks if you wanna be REALLY authentic.

    Sounds delicious/healthy! thank you!! It reminds me of a delicious flavorful soup I had in China Town, San Francisco, a few yrs ago.
