Baked Avocado Vinaigrette

- 4 medium avocados, halved shopping list
- 1 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 6 Tbsp olive oil shopping list
- 1 Tbsp finely chopped chives shopping list
- 3 Tbsp tarragon vinegar shopping list
- 3 Tbsp finely chopped dill pickle shopping list
- 1 Tbsp finely chopped parsley shopping list
How to make it
- Place the avocado halves (seeded) cut side up in a shallow baking pan with some hot water.
- Bake for 15 minutes at 325.
- Mix remaining ingredients into a vinaigrette while baking the avocados.
- Fill each cavity with the vinaigrette and serve.
