  • 1 cup oatmeal
  • 1/2 cup sliced almonds
  • 1/2 cup brown sugar
  • Filling:
  • 1-8 oz. cream cheese
  • 2 cups heavy whipping cream
  • 1/2 cup sugar
  • 2 Tbsp. lemon juice
  • Fresh fruit: strawberries, blueberries, raspberries, peaches etc.

Directions
  1. Topping:
  2. 1/4 cup margarine or butter
  3. 1 cup oatmeal
  4. 1/2 cup sliced almonds
  5. 1/2 cup brown sugar
  6. Melt butter and mix together. Spread out in pan and bake 10 min. at 350 degrees -stir every few minutes.
  7. Filling:
  8. 1-8 oz. cream cheese
  9. 2 cups heavy whipping cream
  10. 1/2 cup sugar
  11. 2 Tbsp. lemon juice
  12. Mix filling ingredients until stiff.
  13. Layer fruit (use whatever fruit --strawberries, blueberries, raspberries etc.) and cream cheese mixture in 9 x 13 pan. Top with oatmeal mixture.
  14. The Oatmeal ganola mix is great on hot cereal, yoghurt or just plain. If you are pressed for time and can't make the cream cheese part-whip topping works in a pinch.

Yum! Can't wait to try it.

I sometimes double the granola recipe and keep the extra in the freezer. We add it to ice cream plus the other ideas I suggested earlier.
