Ingredients
  • 1 1/2 c instant white rice, uncooked
  • 1 1/2c hot water
  • 1 tbs taco seasoning
  • 4 sm boneless skinless chicken breast halves (1lb)
  • 1 each: green and red pepper, cut into strips
  • 1/2 c thick and chunky salsa
  • 1/2 c mexican style shredded or taco shredded cheese

Directions
  1. Heat over to 400. Fold up all side of 4 18x12 inch sheets of heavy duty foil to form 1 inch rim; spray with cooking spray. Combine rice, water and taco seasoning; spoon onto centers of foil. Top with remaning ingredients.
  2. Bring up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside. Place in 15x10x1 baking pan.
  3. Bake 30-35 mins or until chicken is cooked through. Let stand 5 mins. Cut slits in foil to release steam before opening.
