Crustless Vegetables Mini-quiches

- 1/2 cup Hellmans mayonnaise shopping list
- 6 tablespoons all purpose flour shopping list
- 2 cups grated cheese (mild, medium, old or extra old to your taste) shopping list
- 1 cup milk shopping list
- 5 eggs shopping list
- 1 small onion, diced shopping list
- 1 cup fresh brocoli, finely chopped (or frozen) shopping list
- 1 cup fresh cauliflower, coarsely chopped (or frozen) shopping list
- 1 small zucchini, coarsely chopped OR 1 cup mushrooms, coarsely chopped or any other vegetable you have on hand shopping list
- salt and pepper to taste shopping list
- 1/2 cup parmesan cheese shopping list
How to make it
- In the food processor, mix the mayonnaise and the flour.
- Add all the other ingredients EXCEPT the parmesan cheese. Process until you obtain finely chopped vegetables (not too finely chopped, you want vegetable chunks.
- Pour this mixture in a 12 mini-muffins pan well oiled.
- Put the parmesan cheese on top of each mini-quiche.
- Place in 375 degrees oven for 30 minutes then lower the oven to 350 degrees and continue cooking for an additional 15 minutes.
- Check often in the last 15 minutes so they do not get overcooked.
- Serve immediately as appetizers.
- They may be frozen and re-heated.
- Variations: You may also add 1 cup of crab meat, ham or other meat of your choice.
