How to make it

  • Combine sugar, oil, and eggs; beat well.
  • Blend in flour and cinnamon.
  • Add carrots and nuts, mixing well.
  • Pour into a well-greased and lightly floured 10-inch tube pan or Bundt pan.
  • Bake at 350 degrees for 1 hour or until cake test done.
  • Yield: one 10-inch cake.

    I happen to LOVE carrot cake! Hmmm, don't have any carrots, just baby ones (hard to grate), no self-rising flour (about how much baking powder do you think instead to add?), no pecans, - I'm screwed!
