  • Butterscotch Nut Bread
  • 1 large egg
  • 1 cup brown sugar
  • 1 1/2 tbsp. melted butter
  • 2 cups all purpose flour
  • 3/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup buttermilk
  • 1/2 cup chopped walnuts or pecans
  • Preheat oven to 350 degrees. Grease an 8 inch loaf pan. Beat together
  • egg and brown sugar in a large bowl until smooth. Add butter and beat
  • to blend. Sift together flour, baking powder and baking soda in a
  • small bowl. Stir in salt. Add flour mixture to batter alternately
  • with buttermilk in 2 additions. Beat until well mixed. Stir in nuts.
  • Pour batter into prepared pan and bake 60 minutes until a toothpick
  • comes out clean. Cool 15 minutes in pan. Invert loaf onto a rack and
  • cool completely.
  • Makes 1 loaf.
