Chilean Country Ribs Recipe
These are very good. They are spicy and very peppery. If you like ribs and you like spicy, you will enjoy these.

Ingredients
  • 3 cloves garlic roughly chopped
  • 1 jalapeno stemmed seeded and roughly chopped
  • 4 scallions white and green parts chopped
  • 7 ounce can chipotle chilies in adobo sauce
  • 3 tablespoons roughly chopped fresh oregano
  • 1 tablespoon kosher salt
  • 1-1/2 cups red wine vinegar
  • 1 cup pure olive oil
  • 4 pounds country pork ribs
  • Freshly ground black pepper to taste

Directions
  1. Combine garlic, jalapeno, scallions, chipotles, oregano and salt in a food processor and mix until relatively smooth.
  2. While the processor is running gradually pour in the vinegar and then the oil.
  3. Transfer this marinade to a bowl.
  4. Season the ribs with salt and pepper and put in a large plastic bag.
  5. Pour 2 cups of marinade over them and refrigerate overnight.
  6. Cover and refrigerate remaining marinade.
  7. Prepare a medium hot fire in a grill.
  8. Remove the ribs from the bag and shake off excess marinade and place on the grill.
  9. Grill for 15 minutes basting with the reserved marinade and flipping them frequently so that they cook evenly.

Sounds a little too spice for me, but I bet my BIL would love it!


THis is for heat lovers!!! must try.


It is spicy but yummy. I love them. My husband has me make him a separate batch with LESS heat which I do by eliminating the jalapeno.
