Spinach Bhaji

- ½ kg (about 1 pound) fresh spinach, coarsely chopped shopping list
- 1 potato cut in half then thickly sliced shopping list
- 3 garlic cloves, chopped shopping list
- 1 green chilli, slit shopping list
- ¼ tsp turmeric shopping list
- ½ tsp mustard seeds shopping list
- ½ tsp grated ginger shopping list
- ½ tsp salt shopping list
How to make it
- Heat oil in pan and add mustard seeds until they pop. Add potato and chilli. Cook 1 minute and add all other ingredients. Cook 20 minutes, stirring regularly until water is evaporated and everything’s tender.
