Creme DeMenthe Cake Recipe
This is one of my favorite made-with-a-mix recipes. It was a hit in my area in the 80s, and I've made it many, many times since then. Easy and looks impressive when served!

Ingredients
  • 1 white cake mix with pudding
  • Eggs, oil, water as per the cake mix directions
  • ½ cup green creme de menthe, divided
  • 1 jar fudge ice cream topping
  • 1 (12-oz.) carton Cool Whip

Directions
  1. Mix cake mix as directed on the box.
  2. Add ¼ cup of the creme de menthe and blend well.
  3. Bake as directed.
  4. Cool.
  5. Spread fudge topping on top of cooled cake.
  6. Mix Cool Whip with the other ¼ cup creme de menthe.
  7. Mix well.
  8. Spread over fudge topping and refrigerate.
  9. Note: I use the creme deMenthe liquor, but you can use the one that you buy in the grocery store that is nonalcoholic and I think sold with ice cream toppings. The alcohol cooks out, but some say not completely, so use your own judgement.
