Salami And Eggs Recipe
Soul food for Jews. Our family always made it with Hebrew National salami as long as we're talking about family soul food. Consider this nirvana.

Ingredients
  • Vegetable oil
  • 3 - 5 slices salami
  • 2 large eggs, whisked
  • Brown deli mustard

Directions
  1. Pour about a tsp or so into a hot cast iron skillet.
  2. Arrange the salami slices in the skillet and cook until it's browned on the bottom and then flip and lightly brown the other side.
  3. Pour the whisked eggs over the salami and cook until the eggs are golden on the bottom. With one of the super-large spatulas flip this over and cook the other side until it is golden, too.
  4. Slide the omelet onto a plate and serve with mustard.

Awesome! It makes me think of a fried bologna and tomato soup thing over mashed potatoes that my ex's family made all the time.


I made one of these for dinner tonight. I used three pieces of salami, which just fit in my little cast iron skillet. It was very good - and super easy! I would have taken a picture but I tore it a little bit when I flipped it over so it had a hole in it and didn't look very pretty. Although I did get it flipped over! :) Thank you, Borinda.


This sounds delicious but more direction would be nice. What temperature should the heat be when frying the salami? When cooking the eggs? Thank you.
