Ingredients
  • Pumpkin Bread!
  • 2 c all purpose flour
  • 1 t baking soda
  • 1/2 t baking powder
  • 1/2 t salt
  • 3/4 c sugar
  • 1/2 c applesauce
  • 2 T olive oil
  • 1 T vanilla extract
  • 2 large eggs beaten
  • 1 c canned pumpkin (not the pie mix)
  • 1 t cinnamon
  • 1 t nutmeg
  • 1 t allspice

Directions
  1. Heat oven to 350 and grease and flour a loaf pan (9 by 3").
  2. Whisk together flour, baking soda, salt, and spices.
  3. Then in another bowl, mix together the sugar, apple sauce, oil and vanilla.
  4. Beat in eggs and then using a large spoon, mix in the pumpkin.
  5. Gradually stir in the dry ingredients until everything is combined.
  6. Pour into loaf pan.
  7. Bake about 50 minutes until a toothpick inserted comes out clean.
  8. Let the bread cool a bit before trying to remove it from the pan.
  9. Run a knife around the edge first, too.
  10. You can make apple bread by substituting 1 cup of chunky applesauce, or banana bread by substituting 1 1/2 c mashed ripe bananas.
  11. You can also add 1/4 to 1/2 c of chopped walnuts, too.
  12. I love this recipe because you have most of the stuff at home already
  13. 1/8th of the loaf is 200 calories, 4 g of fat, 4 g protein, and 38 g of carbs:
