Squids calamari Lethriana from Smyrna

- 1 kg squids (small ca 3-4 cm) shopping list
- 2 medium onions chopped shopping list
- 3 cloves of garlic chopped shopping list
- 2 bay leaves shopping list
- 3 ripe tomatoes peeled cut in small cubes shopping list
- 1 ts tomato paste (concentrated) shopping list
- 1 c olive oil shopping list
- 1/2 c dry white whine ( whine I said no cooking whine) shopping list
- 6 drips tabasco ( more if you like it hot) shopping list
- 1 c green olives sliced shopping list
- 1 ts each salt/white pepper/paprika to taste shopping list
- 1 lemon sliced to garnish shopping list
- 1 bunch of parsley to garnish shopping list
- 1 french brown baquette or more shopping list
How to make it
- Heat oil in a deep frying pan and saute onion, garlic,till soft ( ca 8 min), add squids and whine, close pan and cook for ca 20 min
- Add tomato, bay leaves, salt, pepper and paprika, cook for another 20 min
- Add olives, tabasco, tomato paste and cook 15 min more
- Serve hot, garnish with parsley and lemon slices, with warm bread to dip in sauce
