How to make it

  • chop onion and fry in oil till tender
  • put onion in a bowl and let it cool a little
  • crumble feta on top of onion and mix well with a fork
  • add feta onion mix to potatoes and mix well
  • make patties 3 in in diameter
  • fry patties in oil [i like bacon grease]

    I love making potato cakes from leftover mashed potatoes but never thought to add feta - sounds interesting. Bookmarking to try next time I've got leftover pototoes. Thanks!
