Mamas Pasta Dough Recipe
This is a lovely, eggy pasta dough that my Italian grandmother used to make. You can roll this paper thin or leave it thicker. In any case, it's delicious and very easy.

Ingredients
  • 4 cups all purpose flour
  • 1 teaspoon salt
  • 1 whole egg
  • 3 additional egg yolks
  • 1/2 cup water
  • 3 tablespoons butter, room temperature
  • NOTE: You can exchange some or all of the flour for semolina flour if you'd like.)

Directions
  1. Mix dry ingredients in the bowl of your stand mixer. Reserve about 1/2 to 3/4 cup of flour.
  2. Warm water to about 110 degrees. Cut butter into small pieces and melt in the warm water.
  3. Add eggs and yolks to dry ingredients and beat using flat blade attachment.
  4. Add water and butter and continue to beat until dough comes together.
  5. Change attachments and using the dough hook, knead dough until it is soft and comes together in a smooth ball. This takes about five minutes, more or less.
  6. If dough seems dry, add more warm water. If it seems too wet, add reserved flour about a tablespoon at a time.
  7. Let the dough rest for 30 to 45 minutes.
  8. At this point, roll out the dough or use your pasta maker to shape the dough into the size and shape you want.
  9. After dough is shaped, use immediately or let it dry in a single layer for several hours or overnight. Once it’s dried, you can refrigerate it for a few days or freeze.
