How to make it

  • Mix dry ingredients in the bowl of your stand mixer. Reserve about 1/2 to 3/4 cup of flour.
  • Warm water to about 110 degrees. Cut butter into small pieces and melt in the warm water.
  • Add eggs and yolks to dry ingredients and beat using flat blade attachment.
  • Add water and butter and continue to beat until dough comes together.
  • Change attachments and using the dough hook, knead dough until it is soft and comes together in a smooth ball. This takes about five minutes, more or less.
  • If dough seems dry, add more warm water. If it seems too wet, add reserved flour about a tablespoon at a time.
  • Let the dough rest for 30 to 45 minutes.
  • At this point, roll out the dough or use your pasta maker to shape the dough into the size and shape you want.
  • After dough is shaped, use immediately or let it dry in a single layer for several hours or overnight. Once it’s dried, you can refrigerate it for a few days or freeze.
