How to make it

  • Preheat oven to 180C
  • In a medium bowl, use electric beaters to whisk eggs till they're pale and frothy. Add caster sugar and continue whisking (about 2 minutes) till the mixture is thick and pale.
  • Sift the self-raising flour and cocoa over the egg mixture and use a spatula to fold in together with the hot water. Pour mixture into a 4 cup ovenproof dish.
  • FOR THE SAUCE; combine the boiling water, brown sugar and cocoa in a bowl and stir to combine.
  • Carefully pour the sauce mixture over the back of a large spoon onto the batter. Bake for 45 minutes. (a skewer inserted half-way into the pudding should come out clean)
  • Let it stand for 10 minutes before digging into it.
  • Serve with ice cream if you want.
  • **** this recipe also halves good, like if theres only 2 of you and you dont want to stuff yourselves silly, and any left-overs (pff yeah right) also microwave good.

    when i say 'pudding' i mean it as in the brittish meaning. ie, NOT like a snak pak.
    but yes, it has got a cakey texture, and it produces its own chocolate sauce as it bakes.
