Pretty-much fat-free chocolate dessert. Its kinda chewy on top, then fluffy in the middle, then rich and saucy on the bottom. What more could you want?

Ingredients
  • 2 eggs (at room temperature)
  • 1/3 cup caster sugar
  • 2/3 cup self-raising flour
  • 1 Tbsp cocoa powder
  • 1 1/2 Tbsp hot water
  • **********FOR THE SAUCE************
  • 1 1/4 cups boiling water
  • 1/2 cup brown sugar
  • 2 Tbsp cocoa powder

Directions
  1. Preheat oven to 180C
  2. In a medium bowl, use electric beaters to whisk eggs till they're pale and frothy. Add caster sugar and continue whisking (about 2 minutes) till the mixture is thick and pale.
  3. Sift the self-raising flour and cocoa over the egg mixture and use a spatula to fold in together with the hot water. Pour mixture into a 4 cup ovenproof dish.
  4. FOR THE SAUCE; combine the boiling water, brown sugar and cocoa in a bowl and stir to combine.
  5. Carefully pour the sauce mixture over the back of a large spoon onto the batter. Bake for 45 minutes. (a skewer inserted half-way into the pudding should come out clean)
  6. Let it stand for 10 minutes before digging into it.
  7. Serve with ice cream if you want.
  8. **** this recipe also halves good, like if theres only 2 of you and you dont want to stuff yourselves silly, and any left-overs (pff yeah right) also microwave good.
