A Fricken Vegetarian Stew Recipe
AKA african vegetarian stew. Root vegetables, chick-peas, cous cous, with a few raisins to keep it interesting.....ALL my favourites havin a big ol' vegetarian orgy in my stew pot. WOO HOOO. ok...calm down, Zoe.....

Ingredients
  • 4 parsnips, peeled, cut into chunks
  • 1 large onion, chopped
  • 2 sweet potatoes, chopped into chunks
  • 2 zucchini, thickly sliced
  • 1 can chopped tomatoes (or 5 fresh ones)
  • 1 can chick peas, (garbanzo beans) drained
  • 1/2 cup cous cous
  • 1/4 cup raisins
  • 1 tsp ground coriander seeds
  • 1/2 tsp tumeric
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 3 cups water

Directions
  1. Throw everything in a big pot, bring to the boil then simmer for about 20 minutes ill the vegies are tender. TOO FRICKEN EASY!!!
  2. *** You can serve the cous cous separatey if you want, but thats just more dishes int it? and i like how it make the stew all thick like when you cook it in with it.

Yum! I used to make a vegitarian African stew years ago but lost the recipe in a move. This sounds alot like it. Thanks for posting.
