Spinach And Ricotta Stuffed Shells Recipe
This is a good easy weeknight meal. You can make these in bulk and keep in the freezer without the sauce. Pull out what you need, add sauce and in 1/2 hour, you are ready to eat!

Ingredients
  • 12 oz jumbo shells
  • Marinara sauce or sauce of your choice
  • 2 pkgs frozen chopped spinach, thawed and squeezed dry
  • Olive oil
  • Breadcrumbs
  • 2 ΒΌ cups ricotta cheese
  • 2 cloves garlic, crushed
  • Black pepper and salt
  • Pine nuts
  • Parmesan cheese

Directions
  1. Mix spinach, ricotta, olive oil and breadcrumbs.
  2. Add crushed garlic.
  3. Add salt and pepper to taste
  4. Cook shells al dente.
  5. Stuff shells with spinach mixture
  6. Cover with tomato sauce.
  7. Sprinkle with pine nuts and parmesan cheese.
  8. Bake at 375 degrees 15 to 20 minutes.
