A vegetarian pie. Yogurt makes it creamy and delicious. Great as appetizer or even as a main dish!

Ingredients
  • 2 pie crusts (check my recipe collection)
  • 1 medium size zucchini, chopped
  • 1/2 onion, chopped
  • 4 - 5 cloves of garlic
  • 1/2 - 3/4 can of corn
  • 5 Tbs yogurt
  • 1 egg
  • 2 Tbs olive oil
  • 2 Tbs chopped dill
  • 2 tsp crushed red pepper
  • 1 cup cooked vegetarian sausage (optional)

Directions
  1. Have one pie crust ready on pie plate.
  2. Add the zucchini, onion, garlic and corn (or whichever vegetables you chose.) If you choose to add vegetarian sausage, this is a good time to add it as well.
  3. In another bowl, mix the yogurt, oil, egg and the spices.
  4. Pour the egg + yogurt mix over the vegetables.
  5. Top with additional pie crust and pressed sides to seal.
  6. Make three slashes gently on top.
  7. Bake in the 350F oven until it is brown, for about 30 - 40 mins.
  8. Allow to cool slightly before cutting!
  9. Enjoy, it is simply delicious!

Mmmm... yummy! Sounds great. I'd probably throw in a bit of cheese too. (i put cheese in almost everything... LOL) Can't wait to try this. :)
