Ingredients
  • 1 lb lean ground beef
  • 1/2 lb lean ground pork
  • 1/2 lb lean ground turkey
  • 2 eggs
  • 1/2 cup dry oat bran cereal
  • 3/4 medium-sized onion, finely chopped
  • 2 tsp dried parsley flakes
  • 2 tbsp dried basil
  • 2 tbsp soy sauce (KIKKOMAN is my preference, personally!)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 oz dry red wine
  • 1.4 cup sour cream
  • ----------------------------------------
  • The Veggie layer:
  • 3/4 cup diced celery
  • 3/4 cup red pepper, chopped
  • 3/4 cup wax beans, french cut
  • 3/4 cup slivered carrots

Directions
  1. In a large bowl, combine:
  2. beef, pork, turkey, eggs, and bran cereal.
  3. Mix well. Add the eggs, and combine thoroughly
  4. Add the parsley and basil, soy sauce, salt and pepper, and red wine.
  5. Mix together well, and set aside...

  7. The veggie layer:
  8. Combine all four veggie ingredients, and mix well.
  9. Take 1/2 of the meatloaf mixture, and set the other half aside.
  10. In a large, deep baking dish, place the first half of the meat mixture, pressing down well to flatten.
  11. Add the veggie combination on top.
  12. Now add the second half of the meat on top of the veggie layer, pressing down to an even, flat level.
  13. Brush the top of the meatloaf with the sour cream.
  14. Bake at 365*F for 45 minutes, or until the top is browned nicely, and all juices run clear.

I live on my own little Utopia-type farm, and have my own cattle, shep, pigs, chickens, and turkeys.
This sounds like a darned good recipe.
