How to make it

  • The fruit should be left in the soaking vinegar overnight, then cooked in the same vinegar until soft. Drain.
  • Put the fruit through a mill.
  • Add the sugar and onions and cook in a pot with the brown wine vinegar. (The amount of vinegar depends on the consistency: it should not be too runny or too thick, but have the same consistency as the end product you find in the bottle.)
  • Add spices and cook for one to two hours. Stir occasionally with a wooden spoon to prevent burning.
  • Sterlise your bottles and spoon in the mixture. That's it - you've got Mrs Ball's Chutney.
  • To make the chutney hot, add 75 g chopped chillies.
  • To make peach chutney, omit the apricots and use 850 g dried peaches instead.

    I only used two cause the recipy say use but not to let it get too runny...I also didnt have dreid apricots so I used selfmade canned ones...in the meanwhile Ive added 2 canns cause it was very runny...but it´s got a very very strong vinegar taste...and I also didnt have red Pepper so I used black...but only half and still it´s very peppery...we like Hot chutney..but this I think is a bit too much.

    I´m busy cooking this recipy, only 2l of vinnegar ...it´s got a very strong vin. taste how can I change that?

    Chillimo. I would like to test this recipe, but sorry I have to query directly. Have you not made an error with the amounts of vinegar - that as much a 7 litres and less than 1 kg of dried fruit. Have I misunderstood your directions?

    Wow, these are very precise instructions. I like the ingredients, however is the brown vinegar a little less sharp, as this recipe seems to have a lot of it.
