Ingredients
  • 612 g dried peaches
  • 238 g dried apricots
  • 3 litres brown wine vinegar -> (Note: 1 to 2 litres of brown wine vinegar for soaking & about 2 litres of brown wine vinegar for mixing)
  • 2 1/2 kg white sugar
  • 500 g onions (minced)
  • 120 g salt
  • 75 g cayenne pepper
  • 75 g chopped chillies (optional)

Directions
  1. The fruit should be left in the soaking vinegar overnight, then cooked in the same vinegar until soft. Drain.
  2. Put the fruit through a mill.
  3. Add the sugar and onions and cook in a pot with the brown wine vinegar. (The amount of vinegar depends on the consistency: it should not be too runny or too thick, but have the same consistency as the end product you find in the bottle.)
  4. Add spices and cook for one to two hours. Stir occasionally with a wooden spoon to prevent burning.
  5. Sterlise your bottles and spoon in the mixture. That's it - you've got Mrs Ball's Chutney.
  6. To make the chutney hot, add 75 g chopped chillies.
  7. To make peach chutney, omit the apricots and use 850 g dried peaches instead.

Wow, these are very precise instructions. I like the ingredients, however is the brown vinegar a little less sharp, as this recipe seems to have a lot of it.

I think brown vinegar a slightly milder, but use your discretion:)


Chillimo. I would like to test this recipe, but sorry I have to query directly. Have you not made an error with the amounts of vinegar - that as much a 7 litres and less than 1 kg of dried fruit. Have I misunderstood your directions?


My sincere apologies for not making it clearer. I've edited the recipe, it's only 3lt vinegar. Hope it makes sense now.
