Ingredients
  • 4 slices bacon cut into 1 inch pieces
  • 1 medium onion chopped
  • 2 cans sauerkraut drained
  • 2 TBS packed brown sugar
  • 4 med potatoes cut into fourths
  • 2 tart apples sliced-Granny Smith works well (She is getting kind of long in the tooth and hard of hearing but she will still work pretty good)
  • 12 juniper berries (optional)
  • 6 Whole peppercorns
  • 2 whole cloves
  • 1 sprig parsley
  • 1 bay leaf
  • 4 smoked pork chops, 1/2" thick
  • 4 frankfurters, slashed diagonally
  • 2 Cups chicken broth

Directions
  1. Cook and stir bacon and onion in Dutch oven or 12" skillet until bacon is crisp; drain.
  2. Stir in Sauerkraut and brown sugar.
  3. Add potatoes and apples
  4. Tie all spices in cheesecloth bag or a tea ball; add to Sauerkraut
  5. Add pork and frankfurters
  6. pour chicken broth over meat
  7. Heat to boiling
  8. reduce heat cover and simmer until meat is done and potatoes are tender, about 30 minutes.
  9. Remove Spice bag
  10. Place the dish on a platter and enjoy.
