Ingredients
  • 2 1/2 to 3 lb. bone in country style pork ribs
  • 1 (12 ounce bottle) dark ale, stout or non-alcoholic beer
  • 3 cloves garlic minced
  • 1 Tbl finely shredded lemon peel
  • 1 Tbl rosemary, crushed
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 8 small gold or red potatoes
  • 12 ounces peeled fresh baby carrots
  • 1/4 C cold water
  • 2 Tbl cornstarch
  • Radishes (optional)
  • Fresh rosemary sprigs (optional)
  • Shredded lemon peel (optional)

Directions
  1. Place pork in a resealable
  2. Add first 7 ingredients to bag, seal and turn to coat ribs
  3. Refrigerate 4 hours or overnight, turning occasionally
  4. Place potatoes and carrots in the bottom of a 5 to 6 qt. slow cooker
  5. Transfer pork ribs to bed of carrots and potatoes
  6. Pour ale mixture over all
  7. cover and cook on low for8 to 9 hours or on high for 4 to 4 1/2 hours
  8. Remove pork from cooker; cover and keep warm
  9. Pour cooking liquid through sieve into a heat proof bowl to strain
  10. Measure out 2 Cups of the juices, if necessary add water to make 2 cups
  11. Stir 1/4 C water and cornstarch together in a medium saucepan
  12. Add the 2 cups of strained liquid and cook stirring over medium heat until thick and bubbly
  13. Cook and stir 2 minutes longer
  14. Serve sauce with meat, vegetables and radishes, if using
  15. Makes 4 to 6 servings
