Slow Cook Ale Sauced Pork Ribs And Vegetables

- 2 1/2 to 3 lb. bone in country style pork ribs shopping list
- 1 (12 ounce bottle) dark ale, stout or non-alcoholic beer shopping list
- 3 cloves garlic minced shopping list
- 1 Tbl finely shredded lemon peel shopping list
- 1 Tbl rosemary, crushed shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp ground pepper shopping list
- 8 small gold or red potatoes shopping list
- 12 ounces peeled fresh baby carrots shopping list
- 1/4 C cold water shopping list
- 2 Tbl cornstarch shopping list
- radishes (optional) shopping list
- Fresh rosemary sprigs (optional) shopping list
- Shredded lemon peel (optional) shopping list
How to make it
- Place pork in a resealable
- Add first 7 ingredients to bag, seal and turn to coat ribs
- Refrigerate 4 hours or overnight, turning occasionally
- Place potatoes and carrots in the bottom of a 5 to 6 qt. slow cooker
- Transfer pork ribs to bed of carrots and potatoes
- Pour ale mixture over all
- cover and cook on low for8 to 9 hours or on high for 4 to 4 1/2 hours
- Remove pork from cooker; cover and keep warm
- Pour cooking liquid through sieve into a heat proof bowl to strain
- Measure out 2 Cups of the juices, if necessary add water to make 2 cups
- Stir 1/4 C water and cornstarch together in a medium saucepan
- Add the 2 cups of strained liquid and cook stirring over medium heat until thick and bubbly
- Cook and stir 2 minutes longer
- Serve sauce with meat, vegetables and radishes, if using
- Makes 4 to 6 servings
