Halibut With Sour Cream Dill Sauce Recipe
I came up with this recipe to copycat the oven roasted halibut offered at Anthony's Homeport in Seattle. You could also do this using salmon instead.

Ingredients
  • 4 - 6 oz halibut fillets
  • 2 tbsp. olive oil
  • course salt
  • 2/3 c. sour cream
  • 2 tbsp. red onion, finely chopped
  • 1/2 tsp. finely shredded lemon peel
  • 1 tsp. fresh dillweed or 1/2 tsp. dried dillweed

Directions
  1. Preheat oven to 450 degrees.
  2. Rinse fish under cool running water to wash away impurities. Pat dry with paper towels and rub with a bit of olive oil or melted butter. Sprinkle with course salt and pepper. Set aside.
  3. Prepare sour cream-dill sauce by combining sour cream, red onion (or chives), lemon peel and dillweed. (Use a good, full fat sour cream for this). Set sauce aside.
  4. Place halibut fillets in shallow pan and roast in oven for 6 to 8 minutes, depending on thickness, or until fish flakes easily with fork.
  5. Spoon the sour cream mixture over each fillet. Bake 8 -10 minutes llonger, or until the sour cream is set. Garnish with thin lemon slices and parsley.

This reminds me of something my cousin from Norway made-poached salmon with sour cream on the side. I like the dill, lemon zest and red onions.


This sounds wonderful. I bet it would be really good with salmon as well. I'm sure any sturdy fish would be good prepared this way. Thank you!
