Ingredients
  • 7 oz softened butter
  • 7 oz golden caster sugar (or white superfine sugar)
  • 3 eggs
  • 11 oz self-raising flour
  • 3 oz sour cream
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 12 tsps raspberry jam
  • 3 Tbsp caster sugar for dusting

Directions
  1. Preheat oven to 350F / 180C
  2. Place all ingredients (except jam and sugar for dusting) in a mixing bowl and beat with a wooden spoon until smooth.
  3. Line muffin tin with muffin cups.
  4. Place a spoonful of batter into the bottom of each cup.
  5. Make a dip in the batter and place a spoonful of jam in the dip.
  6. Cover the jam with more batter, dividing evenly between the 12 muffin cups.
  7. Bake for 25 minutes or until golden and firm to the touch.
  8. Allow to cool for 10 minutes, then remove and roll the tops in the dusitng sugar while still warm.
  9. Will keep in a covered container for up to 3 days.
  10. For a variation replace jam with a chunk of chocolate and/or roll top in cinnamon sugar.
