How to make it

  • Preheat oven to 350F / 180C
  • Place all ingredients (except jam and sugar for dusting) in a mixing bowl and beat with a wooden spoon until smooth.
  • Line muffin tin with muffin cups.
  • Place a spoonful of batter into the bottom of each cup.
  • Make a dip in the batter and place a spoonful of jam in the dip.
  • Cover the jam with more batter, dividing evenly between the 12 muffin cups.
  • Bake for 25 minutes or until golden and firm to the touch.
  • Allow to cool for 10 minutes, then remove and roll the tops in the dusitng sugar while still warm.
  • Will keep in a covered container for up to 3 days.
  • For a variation replace jam with a chunk of chocolate and/or roll top in cinnamon sugar.
