Jam Doughnut Muffins

- 7 oz softened butter shopping list
- 7 oz golden caster sugar (or white superfine sugar) shopping list
- 3 eggs shopping list
- 11 oz self-raising flour shopping list
- 3 oz sour cream shopping list
- 1/2 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 12 tsps raspberry jam shopping list
- 3 Tbsp caster sugar for dusting shopping list
How to make it
- Preheat oven to 350F / 180C
- Place all ingredients (except jam and sugar for dusting) in a mixing bowl and beat with a wooden spoon until smooth.
- Line muffin tin with muffin cups.
- Place a spoonful of batter into the bottom of each cup.
- Make a dip in the batter and place a spoonful of jam in the dip.
- Cover the jam with more batter, dividing evenly between the 12 muffin cups.
- Bake for 25 minutes or until golden and firm to the touch.
- Allow to cool for 10 minutes, then remove and roll the tops in the dusitng sugar while still warm.
- Will keep in a covered container for up to 3 days.
- For a variation replace jam with a chunk of chocolate and/or roll top in cinnamon sugar.
