Chickpeas Potato Boondi Chaat

- 500 gm chickpeas,boiled shopping list
- 250 gm potatoes,boiled and cubed shopping list
- 3-4 spring roll sheets/wrappers,cut in small pieces shopping list
- 1 onion,thinly sliced shopping list
- 1 tomato,diced shopping list
- 1 small cabbage,thinly sliced shopping list
- 1-2 green chilies,chopped (optional) shopping list
- Chaat masala,to taste shopping list
- For Boondi: shopping list
- 1 cup gram flour shopping list
- 1/8 tsp bicarbonate of soda shopping list
- 3/4 tsp salt shopping list
- 1 tsp Chilli powder shopping list
- 1/2 tsp carom seeds shopping list
- 1/2 tsp cumin seeds shopping list
- pinch of nigella seeds shopping list
- water,as required shopping list
- oil for deep frying shopping list
- For yogurt Sauce: shopping list
- 1000 gms plain yogurt shopping list
- 1 cup water/milk shopping list
- 1 tbsp salt shopping list
- 1/2 to 1 tsp red chillies powder shopping list
How to make it
- Mix boondi ingredients into a bowl.
- Add enough water a little at a time to make a very thick batter(The batter should be thicker than pakora batter).
- Leave to rest for 15 minutes.
- Heat oil in a karahi or deep fryer(Test the temperature by dropping a small amount of batter into the hot oil. It should rise to the top at once).
- Pour batter in polythene bag and hold it like a piping bag, make about 3mm hole at the base. Pipe boondi into hot oil.
- Alternatively hold a perforated spoon over the hot oil. Pour the mixture little by little on the perforated spoon to make boondi.
- Fry to a golden color, turning occasionaly.
- Remove with a slotted spoon, drain on absorbent kitchen paper and then soak the boondi in plenty of warm water for few minutes.
- Press the boondi between the palms carefully to squeeze out the water.
- To make Papri,deep-fry the spring roll sheets in hot oil till golden.Remove and drain on absorbent kitchen paper.
- Assembly:
- Place the chickpeas,boondi,potatoes,tomato,green chillies,onion and cabbage in a serving dish.
- Whisk yogurt with water, salt and chilli powder until smooth and pour evenly into the dish and mix gently.
- Sprinkle Chaat Masala and Sweet Tamarind Mint Chutney.
- Just before serving,place Papri on top.
