I am trying to find ways to use up all my peppers now that summer has ended. Yesterday was chocolate and today is a relish. HOT, HOT, HOT

Ingredients
  • 7 cups finely chopped sweet red peppers (about 16)
  • 20 Habanero peppers
  • 2 tbs. salt
  • 2 cups sugar
  • 1 qt. vinegar
  • .

Directions
  1. I put the peppers through a food processor
  2. Combine the peppers with the salt; let stand 3-4 hours
  3. Add sugar and vinegar; cook, stirring frequently, until thickened -45 mins.
  4. Pour hot into clean jars, leaving 1/4 " head space.
  5. Adjust the lids
  6. Process 10 minutes in boiling water bath.
  7. I use this relish in and on everything. When I make pickles I add a couple tsp. to the brine. Spread on roasted corn on the cob. Rub a pork roast with it and put on the grill~~~~~~~~~~~~~etc
