Blackberry Cake Recipe
I like cakes that do not require icing AND can be eaten with your fingers - something I do a lot of.

Ingredients
  • 4 tablespoons butter
  • 3/4 cup flour
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • dash salt
  • 1/2 cup evaporated milk
  • 2 cups fresh blackberries
  • 2 tablespoons brown sugar

Directions
  1. Preheat oven to 325°. Melt butter in an 8-inch square baking dish in the preheated oven. Combine flour, sugar, baking powder, salt, and milk in a small bowl and beat until smooth. Pour batter over the melted butter, top with the blackberries, then sprinkle the brown sugar evenly over the fruit.
  2. Bake for 45 to 55 minutes, or until browned

Mmmmm. sounds like a summer special. By the way, I agree re. the icing. The cakes are tight once refrigerated if iced.


I totally agree. A cake that can stand alone without frosting is a winner in my book. Blackberries are one of my all time favorites so this one is going to be devoured in the next few days. Thanks for posting. Your recipes are phenominal.
