How to make it

  • Bake sweet potatoes and yams in preheated 375 oven for 1 hour.
  • When cool enough to handle peel and chop potatoes into large pieces.
  • Remove seeds from cardamom pods and discard peel.
  • In spice grinder or mortar and pestle grind cardamom seeds into a fine powder.
  • Put sweet potatoes, cardamom powder, butter, orange juice and brown sugar in food processor.
  • Pulse until a smooth paste then pour mixture into greased baking dish.
  • Garnish with marshmallows then return to oven 5 minutes.
