Bruschetta Recipe
Bruschetta originated in central Italy and it has made it's way around the world with many different preparations.

Ingredients
  • 1 loaf of fresh Italian or French bread.
  • 8 plum tomatoes chopped or 1 can of diced tomatoes drained of all juices or you can even use a jar of salsa sauce - chunky and your choice of heat ;)
  • 1 cup fresh basil, chopped
  • 1 red onion, chopped
  • 5 or 6 cloves garlic, crushed
  • 1 teaspoon dried oregano
  • a handful of fresh Italian flat leafed parsley, coarsely chopped
  • Extra-virgin olive oil
  • Salt and fresh ground black pepper to taste
  • Garnishes: Kalamata olives coarsely chopped, capers, fresh mozzarella, or a slice of "prociutto de parma".
  • Note: I always double this recipe and it's well worth it because everyone wants more, more, more.

Directions
  1. Slice fresh Italian or French bread on the diagonal about 1 inch thick.
  2. Spread crushed garlic on top of bread.
  3. Drizzle or brush with a little extra-virgin olive oil
  4. Arrange bread on a cooking sheet and broil until toasted, approximately 5 minutes.
  5. In a mixing bowl combine tomatoes, onions, basil, parsley and oregano and toss gently.
  6. Season with fresh ground black pepper.
  7. Salt to taste.
  8. Arrange toasted bread on a platter and generously top with tomato mixture.
  9. Serve immediately so the bread doesn't become soggy.
  10. If serving a little later, keep mixture in a bowl and let your guests top the toast themselves.
