Crockpot Sauerkraut With Apples And Polish Sausage Recipe

Ingredients
  • Half coil (0.5 kg) polish sausage, case removed, cut into 16 rounds
  • 1 quart sauerkraut, drained and, if desired, rinsed
  • 2 cups shredded cabbage
  • 8 cloves garlic, finely minced
  • 2 tsp oregano
  • 1/4 tsp pepper
  • 16 small (less than 1.5 in.) potatoes
  • 2 tbsp margarine
  • 1 medium onion, diced
  • 2 medium apples, peeled, diced, tossed in 2 tbsp lemon juice
  • 1 cup water

Directions
  1. Melt margarine in a large skillet and cook the apples, onion and garlic until soft and yellow.
  2. Remove from pan. Stir in oregano and pepper. Set aside.
  3. Saute sauerkraut and cabbage until moisture has evaporated, but do not brown.
  4. Mix thoroughly with apple mixture.
  5. Place one half of the sauerkraut mixture into the crockpot. Add the sausage, then the rest of the sauerkraut, then the potatoes.
  6. Pour the water evenly into the crockpot.
  7. Cook for a half an hour on high, then reduce to low and cook six or seven hours, until potatoes are tender.
