Fried Corn is a staple with a lot of southern meals, dress it up with tomatoe slices on the side, or chopped hot peppers.

Ingredients
  • 8-10 ears of fresh corn of choice
  • 4-5 slices of bacon
  • 1/4 c cooking oil
  • 1/2 stick butter
  • salt and pepper to taste

Directions
  1. Shuck corn
  2. with sharp knife cut kernels from ears (about 1/4 deep)
  3. scrape mik from corn ears both ways
  4. set aside in bowl
  5. pan fry bacon in a cast iron skillet, rendering drippings
  6. remove crisp bacon and set aside
  7. add a little oil to hot pan with drippings
  8. add corn and crumbled bacon
  9. fry over medium heat about 15 minutes
  10. add butter and continue to cook to desired doneness.
  11. May add chopped onions, green peppers, etc to taste
  12. YUM!
