Ingredients
  • 1/2 -medium white onion(diced)
  • 1-14oz whole stewed tomatoes (drained,or use fresh
  • 4-pablonos(blackened and peeled and seeded)
  • 1/4 cup chicken stock
  • dash pepper
  • dash cinnamin
  • 8 oz monterey jack
  • 6-egg s seperated
  • 1-tblsn all purpose flour
  • 1-stick crisco for deep frying pablonos
  • sour cream on top

Directions
  1. Sauce
  2. brown onion in sauce pan lightly
  3. add drained stewed tomatoe
  4. add dash cinnamin and pepper
  5. cook for 20 minutes on simmer,
  6. then add chicken at end
  7. take your cleaned blackened pablonos and stuff with monterey jack cheese
  8. in mixer beat egg whites stiff then fold into yolk and 1 tblspoon flour
  9. dip pablonos in egg mixture and deep fry until golden brown about 2 minutes on eash side place on rack to drain and place in oven for 30 minutes on 350
  10. on plate place reanoladdle sauce on top and sponful sour cream to the side

My husband loves Chili Reanos. I've failed miserably in trying make them in the past. But this sounds good and easy. I'm game for another try. He's very picky he lived in New Mexico for too long... :)
