Ingredients
  • *******CRUST*******
  • 1 1/2 cups macaroon cookie crumbs
  • 1/4 cup butter - melted
  • ***FILLING***
  • 1 quart vanilla ice cream - slightly softened
  • 1/2 container frozen pineapple, orange, banana juice concentrate (thawed)
  • **TOPPING**
  • 1 cup gourmet heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 kiwi fruit - peeled, halved, sliced
  • 1 small starfruit - sliced

Directions
  1. Combine cookie crumbs and melted butter in medium bowl; mix well and press onto bottom and sides of a 9-inch pie plate
  2. Stir together ice cream & fruit juice in medium bowl until well mixed.
  3. Spoon into prepared crust. Cover; freeze until firm (6 hours or overnite)
  4. Beat whipping cream in small bowl at high speed, scraping bowl often, until stiff peaks form. Gradually stir in powdered sugar.
  5. Pipe or spoon whipped cream around edge of pie
  6. Garnish with kiwi or starfruit slices.
