How to make it

  • Short dough. Cream the butter and sugar.
  • Add in the egg and vanilla. Mix on low speed.
  • Add in all the flour at once. Mix only until combined.
  • Place the dough on a paper lined sheet pan and press out flat and refrigerate for 30 minutes or until it is firm enough to work with.
  • Once the dough is firm enough to work with roll out a circle and line your tart pan.
  • Blind bake tart shell at 375 F for 15 minutes or slightly golden brown around the edges.
  • Once you're done with blind baking remove the beans from the tart shell and bake for an additional 7-8 minutes.
  • Pastry cream. Place the milk in a suace pan with the vanilla bean(if using). Bring to a scald.
  • In a seperate bowl mix together the cornstarch, granulated sugar, and salt.
  • Add the egg into the dry ingredients and whisk until smooth.
  • Slowly add about 1/3 of the milk into the egg mixture while whisking rapidly .
  • Pour the tempred egg mixture back into the remaining milk.
  • Place over medium heat and whisk until the mixture has tickened and turn off the stove.
  • Removed the vanilla bean. And if using vanilla extract stir in the vanilla extract.
  • Stir in the butter and continue stirring until butter has dissapeared.
  • Cool the pastry cream until ready to use.
  • Once the tart has cooled and the pastry cream has cooled. You may pour the pastry cream into the tart shell and arrange fruit onto the tart.
