Fruit Tart

- Short Dough shopping list
- 3 oz granulater sugar (0.19 lb) shopping list
- 7 oz unsalted butter room temperature (0.44 lb) shopping list
- 1/2 egg (whisk egg divide it into equal parts) shopping list
- 1/2 tsp vanilla extract shopping list
- 8 oz bread flour (0.50 lb) shopping list
- Pastry Cream shopping list
- 1 pint whole milk (2 cups) shopping list
- 1/2 vanilla bean or 1/2 tsp vanilla extract shopping list
- 1 oz cornstarch (0.06 lb) shopping list
- 4 oz granulated sugar (0.25 lb) shopping list
- 1/4 tsp salt shopping list
- 2 eggs shopping list
- 2 oz unsalted butter shopping list
- fresh fruit shopping list
How to make it
- Short dough. Cream the butter and sugar.
- Add in the egg and vanilla. Mix on low speed.
- Add in all the flour at once. Mix only until combined.
- Place the dough on a paper lined sheet pan and press out flat and refrigerate for 30 minutes or until it is firm enough to work with.
- Once the dough is firm enough to work with roll out a circle and line your tart pan.
- Blind bake tart shell at 375 F for 15 minutes or slightly golden brown around the edges.
- Once you're done with blind baking remove the beans from the tart shell and bake for an additional 7-8 minutes.
- Pastry cream. Place the milk in a suace pan with the vanilla bean(if using). Bring to a scald.
- In a seperate bowl mix together the cornstarch, granulated sugar, and salt.
- Add the egg into the dry ingredients and whisk until smooth.
- Slowly add about 1/3 of the milk into the egg mixture while whisking rapidly .
- Pour the tempred egg mixture back into the remaining milk.
- Place over medium heat and whisk until the mixture has tickened and turn off the stove.
- Removed the vanilla bean. And if using vanilla extract stir in the vanilla extract.
- Stir in the butter and continue stirring until butter has dissapeared.
- Cool the pastry cream until ready to use.
- Once the tart has cooled and the pastry cream has cooled. You may pour the pastry cream into the tart shell and arrange fruit onto the tart.
