I never thought of adding mint to whipped cream but what a nice change... it would be great on drinks or on cakes... this recipe from Dede Wilson, a contributing editor at Bon Appetit magazine

Ingredients
  • Mint whipped cream1/3 cup chopped fresh mint leaves
  • 1/4 cup sugar
  • 3 tablespoons water
  • 1 1/2 cups heavy whipping cream, chilled

Directions
  1. Stir 1/3 cup mint, sugar, and 3 tablespoons water in small saucepan over low heat until sugar dissolves.
  2. Cook just until bubbles appear.
  3. Cover and remove from heat; let steep 30 minutes.
  4. Strain syrup into large bowl, pressing on mint.
  5. Cool completely.
  6. Add 1 1/2 cups chilled whipping cream to syrup and beat until firm peaks form.
