Eggplant Stew Recipe
This is a great vegetarian main dish. Very healthy and hearty.

Ingredients
  • 1 medium eggplant (chopped into 1 inch cubes)
  • 1 medium zucchini (chopped into 1 inch cubes)
  • 1 medium onion chopped
  • 1 tsp oil
  • 2 cloves garlic minced
  • 1 14 oz can of diced tomatoes
  • 1 can kidney beans (red chilli beans work well too), rinsed and drained
  • 1 tsp pepper
  • 1 tsp dill
  • 1 tsp oregano
  • 1 tsp basil
  • salt to taste

Directions
  1. In a bowl, microwave on high, the chopped eggplant with 2 tbsp water and 1 tsp salt for 8 minutes.
  2. Heat oil in pan and saute zucchini, onion and garlic ifor 5 minutes.
  3. Add all other ingredients to pan, including eggplant. Simmer until vegetables are soft.
  4. Serve by itself or over couscous.
