Eggplant Stew

- 1 medium eggplant (chopped into 1 inch cubes) shopping list
- 1 medium zucchini (chopped into 1 inch cubes) shopping list
- 1 medium onion chopped shopping list
- 1 tsp oil shopping list
- 2 cloves garlic minced shopping list
- 1 14 oz can of diced tomatoes shopping list
- 1 can kidney beans (red chilli beans work well too), rinsed and drained shopping list
- 1 tsp pepper shopping list
- 1 tsp dill shopping list
- 1 tsp oregano shopping list
- 1 tsp basil shopping list
- salt to taste shopping list
How to make it
- In a bowl, microwave on high, the chopped eggplant with 2 tbsp water and 1 tsp salt for 8 minutes.
- Heat oil in pan and saute zucchini, onion and garlic ifor 5 minutes.
- Add all other ingredients to pan, including eggplant. Simmer until vegetables are soft.
- Serve by itself or over couscous.
