How to make it

  • In a bowl, microwave on high, the chopped eggplant with 2 tbsp water and 1 tsp salt for 8 minutes.
  • Heat oil in pan and saute zucchini, onion and garlic ifor 5 minutes.
  • Add all other ingredients to pan, including eggplant. Simmer until vegetables are soft.
  • Serve by itself or over couscous.
