Fattoush Salad With Chick Peas And Feta Recipe

Ingredients

Salad

2 (8 inch) pita breads

6 C chopped Romaine lettuce

1 English cucumber, peeled and diced

1/2 red onion. diced

2 large tomatoes, diced

1 (15 oz) can chickpeas, drained and rinsed

1/4 C mimced fresh parsley

1/4 C slivered fresh mint

1/2 C crumbled feta cheese(optional)

Dressing

1/4 c lemon juice

1/4 C olive oil

1 garlic clove, minced

1 tsp cumin

1/4 tsp salt

Directions

Preheat oven to 350F

Separate each pita into two layers and cut into 2 inch strips

Place pita strips on a baking sheet and bake for 8 to 10 minutes or until lightly browned

Break pita into bite size pieces after baking

While pita is baking prepare the vegetables

In a large bowl. combine lettuce, cucumber, onion, tomato, chickpeas, parsley and mint and chill

Dressing

Just before serving, prepare the dressing

In a small bowl whisk together lemon juice, olive oil, garlic, cumin and salt

Pour dressing over salad and toss

Gently mix in toasted pita and feta cheese, if using and serve immediately
