Fattoush Salad With Chick Peas And Feta

- Salad shopping list
- 2 (8 inch) pita breads shopping list
- 6 C chopped romaine lettuce shopping list
- 1 english cucumber, peeled and diced shopping list
- 1/2 red onion. diced shopping list
- 2 large tomatoes, diced shopping list
- 1 (15 oz) can chickpeas, drained and rinsed shopping list
- 1/4 C mimced fresh parsley shopping list
- 1/4 C slivered fresh mint shopping list
- 1/2 C crumbled feta cheese(optional) shopping list
- Dressing shopping list
- 1/4 c lemon juice shopping list
- 1/4 C olive oil shopping list
- 1 garlic clove, minced shopping list
- 1 tsp cumin shopping list
- 1/4 tsp salt shopping list
How to make it
- Preheat oven to 350F
- Separate each pita into two layers and cut into 2 inch strips
- Place pita strips on a baking sheet and bake for 8 to 10 minutes or until lightly browned
- Break pita into bite size pieces after baking
- While pita is baking prepare the vegetables
- In a large bowl. combine lettuce, cucumber, onion, tomato, chickpeas, parsley and mint and chill
- Dressing
- Just before serving, prepare the dressing
- In a small bowl whisk together lemon juice, olive oil, garlic, cumin and salt
- Pour dressing over salad and toss
- Gently mix in toasted pita and feta cheese, if using and serve immediately
