How to make it

  • Preheat oven to 350F
  • Separate each pita into two layers and cut into 2 inch strips
  • Place pita strips on a baking sheet and bake for 8 to 10 minutes or until lightly browned
  • Break pita into bite size pieces after baking
  • While pita is baking prepare the vegetables
  • In a large bowl. combine lettuce, cucumber, onion, tomato, chickpeas, parsley and mint and chill
  • Dressing
  • Just before serving, prepare the dressing
  • In a small bowl whisk together lemon juice, olive oil, garlic, cumin and salt
  • Pour dressing over salad and toss
  • Gently mix in toasted pita and feta cheese, if using and serve immediately
