- 4 slices bacon shopping list
- 1 lb. lean ground beef shopping list
- salt & pepper shopping list
- 1 med. onion, sliced shopping list
- 1 med. bell pepper ,sliced& diced shopping list
- 2 cans red kidney beans shopping list
- 1 lb. chopped roma tomatoes shopping list
- 11/2 tabls. chili powder shopping list
- 1 scant tsp. salt shopping list
- 3/4 lbs. sharpe cheese (your choice) chedder shopping list
- 6 English muffins shopping list
How to make it
- Fry bacon crisp, drain on absorbent paper and reserve drippings.Season meat with salt & pepper, shape into 18 small balls. Fry in 11/2 - 2 tabls. bacon grease until browned. remove fro m pan and keep warm. Cook onionsand peppers in remaining drippings until onions are translucient don't brown them.Add kidney beans do not drain, tomatoes,chili powder,salt, and cheese. Stir until cheese melts.split muffins toast and place on plates . Divide meatballs on top of muffins smother with pan mixture and sprinkle each plate with bacon bits. Makes 6 generous servings
- Option:: Serve with eggs and hot picante to make spicy breakfast
