Fennel Poppy Seed Slaw Recipe
Yummmm! What else can I really say? Use your favorite regular old mayo or sub in a vegan one to make this vegg-friendly!

Ingredients
  • 4 cups thinly sliced fennel
  • 2 cups thinly sliced cabbage
  • 2 celery stalks, finely sliced
  • 1 carrot, peeled and grated
  • ***********
  • 2/3 c mayonnaise
  • 2 tbsp fresh lemon juice
  • 1 1/2 tsp poppy seeds
  • 1/2 tsp celery seeds
  • Pinch of sugar
  • Salt and pepper to taste

Directions
  1. Prepare veggies and very lightly salt to draw out water. Set aside
  2. In a separate bowl, combine mayonnaise, lemon juice, poppy and celery seeds, sugar, and salt and pepper to taste.
  3. Stir in veggies and mix well. Chill for an hour or until serving.

Fennel and cabbage make a great combination.
I love the dressing with the poppy seeds.


Aaaaaah this looks great, so fresh tasting. Idon't think I've ever tried fennel this way before - I usually put it in cooked dishes.
