VERY HEALTHY Chicken Veggie Curry

- 1/2 lb. chicken, cubed (or more if desired) shopping list
- 1 medium potato, cubed shopping list
- 2 carrots, sliced shopping list
- 2 mushrooms, sliced shopping list
- 1 large stalk of broccoli, chopped into smaller pieces shopping list
- 1 TBSP soy sauce shopping list
- 2-3 TBSP curry powder shopping list
- 3 TBSP flour (or 1 TBSP corn starch) shopping list
- 2 CUPS (skim) milk shopping list
- 2 TBSP Splenda (or sugar) shopping list
- 1 TSP salt shopping list
- 5 cloves garlic, chopped or minced shopping list
How to make it
- Slice chicken and vegetables
- Heat wok or skillet on medium-high heat
- Add garlic and soy sauce
- Add chicken and vegetables
- Add curry powder, flour, sugar salt, and milk
- Stir-fry until chicken is completely cooked
- If vegetables are still too firm, reduce heat, cover and simmer
- Feel free to add or omit any vegetables you'd like
- Add additional milk and curry if needed for desired taste
- Enjoy with a side of wheat basmati rice!

This was perfect! It was extremely nice - and very healthy. I cooked it until the potato was soft, but the veggies were still slightly crispy. I don't like mushrooms, so used bell peppers instead.
