Peaches And Cream Coffee Cake Recipe
I was looking for a recipe to give to a small group of women for a brunch. I came upon this one from Fields of Home Guest House and Cabins and knew it would be perfect.

Ingredients
  • 2 1/3 cups flour
  • 1 1/3 cups sugar
  • 3/4 tsp. salt
  • 3/4 cup shortening
  • 2 tsp. baking powder
  • 3/4 cup milk
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1- 3 oz. pkg. cream cheese, softened
  • 1- 14 oz. can sweetened condensed milk
  • 1/3 cup lemon juice
  • 2 tsp. cinnamon
  • 1- 29 oz. can sliced peaches, well drained
  • 1 cup nuts, chopped
  • 1/3 cup brown sugar, packed

Directions
  1. In a large bowl mix flour, sugar, and salt.
  2. Cut in shortening until crumbly. Reserve I cup of the mixture.
  3. To the rest of the crumb mixture add baking powder, milk, eggs, and vanilla. Beat well.
  4. Spread into an prepared pan (13X9).
  5. Bake at 350 degrees for 25 minutes or until set.
  6. Meanwhile, in a bowl beat cream cheese until fluffy. Add sweetened condensed milk.
  7. Stir in lemon juice, peaches, and half of the nuts and cinnamon.
  8. In another bowl combine the reserved crumbs and remaining nuts and cinnamon. Add the brown sugar.
  9. Spoon the peach mixture ontop of the cake.
  10. Sprinkle crumb mixture ontop of the peach mixture.
  11. Bake 35 minutes longer or until set.
  12. Serve warm.
