Peaches and Cream Coffee Cake

- 2 1/3 cups flour shopping list
- 1 1/3 cups sugar shopping list
- 3/4 tsp. salt shopping list
- 3/4 cup shortening shopping list
- 2 tsp. baking powder shopping list
- 3/4 cup milk shopping list
- 2 eggs shopping list
- 1 tsp. vanilla extract shopping list
- 1- 3 oz. pkg. cream cheese, softened shopping list
- 1- 14 oz. can sweetened condensed milk shopping list
- 1/3 cup lemon juice shopping list
- 2 tsp. cinnamon shopping list
- 1- 29 oz. can sliced peaches, well drained shopping list
- 1 cup nuts, chopped shopping list
- 1/3 cup brown sugar, packed shopping list
How to make it
- In a large bowl mix flour, sugar, and salt.
- Cut in shortening until crumbly. Reserve I cup of the mixture.
- To the rest of the crumb mixture add baking powder, milk, eggs, and vanilla. Beat well.
- Spread into an prepared pan (13X9).
- Bake at 350 degrees for 25 minutes or until set.
- Meanwhile, in a bowl beat cream cheese until fluffy. Add sweetened condensed milk.
- Stir in lemon juice, peaches, and half of the nuts and cinnamon.
- In another bowl combine the reserved crumbs and remaining nuts and cinnamon. Add the brown sugar.
- Spoon the peach mixture ontop of the cake.
- Sprinkle crumb mixture ontop of the peach mixture.
- Bake 35 minutes longer or until set.
- Serve warm.
