You can chill the second layer a little but it will make it harder to spread over the crust. I usually use two of the 99 gm (3.5 oz.) net weight pudding packs. After you mix them with the milk, let them thicken a little bit before spreading over the second layer. It should be fine to use melted butter instead of margarine for the crust.
