Tomato and Avocado Bruschetta

- 4-6 roma tomatoes or plum tomatoes, seeded shopping list
- 1 avocado--the riper, the more creamy shopping list
- 2 green onions, chopped shopping list
- 1 small minced garlic clove shopping list
- 2 Tbsp fresh basil, or dried to taste shopping list
- 2 Tbsp freshly grated parmesan shopping list
- 2 tsp freshly squeezed lime or lemon juice shopping list
- 1 1/2 tsp olive oil shopping list
- 1/2 tsp salt shopping list
- pepper to taste shopping list
How to make it
- Seed and coarsely chop tomatoes.
- Peel and cut avocado into 1/4 inch cubes. Add to tomatoes in small bowl
- Stir in onions, garlic, basil, Parmesan cheese, lime or lemon juice, olive oil, salt and pepper.
- Serve on sliced French bread or crackers..
- Makes about 2 3/4 cups
- Per 1/4 cup: 1.1 gr protein, 3.8g fat, 2.7g carb, 0.3 mg iron, 23 mg calcium, 46 calories
