Tomato And Avocado Bruschetta Recipe
This dish is wonderful for munching... For those watching their waistline, I have used Crispbreads or any of the diet line of crackers. It is so good, you don't need the crackers anyhow... just grab a spoon and enjoy.

Ingredients
  • 4-6 Roma tomatoes or plum tomatoes, seeded
  • 1 avocado--the riper, the more creamy
  • 2 green onions, chopped
  • 1 small minced garlic clove
  • 2 Tbsp fresh basil, or dried to taste
  • 2 Tbsp freshly grated parmesan
  • 2 tsp freshly squeezed lime or lemon juice
  • 1 1/2 tsp olive oil
  • 1/2 tsp salt
  • pepper to taste

Directions
  1. Seed and coarsely chop tomatoes.
  2. Peel and cut avocado into 1/4 inch cubes. Add to tomatoes in small bowl
  3. Stir in onions, garlic, basil, Parmesan cheese, lime or lemon juice, olive oil, salt and pepper.
  4. Serve on sliced French bread or crackers..
  5. Makes about 2 3/4 cups
  6. Per 1/4 cup: 1.1 gr protein, 3.8g fat, 2.7g carb, 0.3 mg iron, 23 mg calcium, 46 calories
