How to make it

  • Seed and coarsely chop tomatoes.
  • Peel and cut avocado into 1/4 inch cubes. Add to tomatoes in small bowl
  • Stir in onions, garlic, basil, Parmesan cheese, lime or lemon juice, olive oil, salt and pepper.
  • Serve on sliced French bread or crackers..
  • Makes about 2 3/4 cups
  • Per 1/4 cup: 1.1 gr protein, 3.8g fat, 2.7g carb, 0.3 mg iron, 23 mg calcium, 46 calories
