Supreme Enchiladas Recipe
These are my famous enchiladas! My family loves them, my boyfriend goes crazy over them, and my friends request them at every pot luck! You can easily sub chicken for beef or go meatless. I've even used ground turkey!

Ingredients
  • 1 Pound Browned Ground Beef
  • 1 10count package of large flour tortillas
  • 16 Oz Shredded Cheese (cheddar or Colby jack)
  • 1 Can Refried Beans, Heated
  • 1 large can of enchilada sauce
  • 1 can sliced olives

Directions
  1. Preheat the oven to 400
  2. First reserve a handful of cheese and a few olives for the top of the enchiladas
  3. Lay your stack of tortillas out and place a light bit of enchilada sauce at the bottom and spread it around the inside of the tortilla
  4. Place a spoon full of beans, a few spoon fulls of beef, a large pinch of cheese, and a few olives inside of the tortilla
  5. Roll the tortilla and place it seam down in a large 9 X 13 baking pan
  6. Continue until you run out of filling or tortillas (should make about 8 enchiladas)
  7. Use the rest of the enchilada sauce to smother the enchiladas in the pan and top with the reserved cheese and olives
  8. Place in the oven at about 400 for 15-25 minutes, until the cheese is nice and melted and the enchiladas are heated through
