How to make it

  • Preheat the oven to 400
  • First reserve a handful of cheese and a few olives for the top of the enchiladas
  • Lay your stack of tortillas out and place a light bit of enchilada sauce at the bottom and spread it around the inside of the tortilla
  • Place a spoon full of beans, a few spoon fulls of beef, a large pinch of cheese, and a few olives inside of the tortilla
  • Roll the tortilla and place it seam down in a large 9 X 13 baking pan
  • Continue until you run out of filling or tortillas (should make about 8 enchiladas)
  • Use the rest of the enchilada sauce to smother the enchiladas in the pan and top with the reserved cheese and olives
  • Place in the oven at about 400 for 15-25 minutes, until the cheese is nice and melted and the enchiladas are heated through
